At Il Clay, Chef Ciro’s signature 48-hour proofed dough and Neapolitan techniques form the soul of each pizza. Every ingredient is handpicked — from San Marzano tomatoes to buffalo mozzarella and pacchetelle from Mount Vesuvius — brought together with a creative Mediterranean twist.
One of his signature creations, the Regina Margherí, is a modern ode to the classics: vibrant tomato base, fresh cheese, fragrant pesto, and a finish of extra virgin olive oil.
